Granola

This is a super simple and fast recipe for homemade granola. The maple syrup, coconut oil, and vanilla give it just a little sweetness. This has become a favorite snack accompaniment in my house so I’ve taken to making it in double or triple batches and keeping sealed Ziploc bags of it on hand. My favorite dessert or snack is Fage Total yogurt with blueberries or blackberries, this granola, and a drizzle of maple syrup. I’ve also eaten this just with milk like cereal and it’s delicious like that also.
Healthy Oatmeal Bars

These oatmeal bars are so, so good! Kids usually love them and they’re really healthy but don’t taste like health food. I like to make them and keep some in the freezer or fridge for a quick breakfast or snack.
Homemade Microwave Popcorn

I like to make popcorn as a snack when I’m at work – I keep popcorn ingredients in my desk drawer for when the urge strikes. I stopped buying pre-packaged microwave popcorn for a few reasons – it’s expensive, for one. And I learned that they put teflon chemicals (highly suspected cancer causers) in the bag lining to keep the oil from seeping out of the bag. Those things, in addition to all the additives they put in the popcorn seasonings, left me looking for other options. This homemade microwave popcorn recipe will cost you about 25 cents a bag, if that. It’s just as easy to make and much healthier.
Nutty Monkeys

I eat nutty monkeys a few times a week, mostly for breakfast but occassionally for lunch even. These are awesomely delicious, filling, and easy.
Fruit Smoothies

Fruit smoothies make for a great breakfast on the go or snack. They’re also a great way to sneak in veggies! I add a small handful of spinach, kale or chard leaves into my smoothie to get some amazingly nutritious greens in my diet. The taste of those greens is mild enough that it’s taste is completely masked by the fruit and a small handful of greens is about a serving, so it’s an easy way to get a serving of veggies.
