Tabbouleh Salad
If you’ve never had tabbouleh salad, you’re in for a treat. This is a great summer dish, perfect as an appetizer with pita or wrap bread and amazing spooned over some grilled chicken. Healthy, light and easy, make a big batch and eat it through the week.
Zucchini Cakes
What does one do when confronted with an out of control zucchini plant? Zucchini Cakes are one idea. I was getting tired of eating sauteed zucchini and figured eating large amounts of zucchini muffins wouldn’t do my waistline much good. So I experimented with the idea of making zucchini cakes, a twist on a potato latke but with shredded zucchini. Turns out, they’re pretty awesome.
Roasted Tomato Bruschetta

This was another Beth Girls Night recipe, which she got from Rachel Ray. It’s a nice twist on regular bruschetta. Roasting cherry tomatoes makes them warm, squishy and sweet, perfect atop a toasty slice of carb goodness.
Bruschetta

Bruschetta is an easy appetizer to make that’s always a crowd pleaser. It tastes a little fancy, but it’s the easiest thing to toss together. You can also serve bruschetta over grilled chicken or steak, on sandwiches, or just eat by itself for a healthy snack!
Salsa
This is the much appreciated Castaneda family salsa recipe, given to me by my good friend Carrie. Her family is from Mexico so they know what good salsa is!
Black Bean and Corn Salsa

This salsa is great as an appetizer, served over tacos, or just eaten plain. It’s easy and tasty, especially in the summer.
Mumsie’s Meatballs

This is an old family recipe. Our adopted grandmother, Mumsie, used to make these at Christmas. Every time I’ve made these for a party, they’re a huge hit. This recipe makes about 40 meatballs. Plan ahead for these! The meatballs are best if they’re left to marinade in the sauce overnight.
