Tater Tot Casserole
My friend and former roommate Adrienne used to make me this midwest classic for me when we lived together. Ingredients consisted of canned cream of mushroom soup, some faux meat (she’s not much of a meat eater) and some tots on top. Brian, being a midwest-born guy, happens to LOVE Tater Tot Casserole. It’s one of the few meals he requests. And I loved it because I could keep the ingredients in the pantry and make this when I didn’t have anything planned. But when I moved us away from processed foods, we were both sad to think Tater Tot Casserole didn’t have much of a place in our life anymore. So I set on a mini-quest to make a homemade, slightly healthed-up version the old TTC . While this isn’t perfect and certainly isn’t health food, it’s a good compromise. TTC is back in our meal plan and that is something to be excited about.
Spaghetti with Bolognese Sauce

Spaghetti is an easy throw together meal and making your own homemade sauce is actually easy peasy. The secret ingredient in my sauce is a splash of Sherry or Port wine, which gives this sauce some extra sweetness. I often make a big batch and freeze leftovers for lasagna or quick defrost dinner, as needed.
Fusilli with Sausage and Sun-Dried Tomatoes

A continuation of the Beth Girls Night success. This pasta is comprised of sundried tomatoes, artichoke hearts, sausage, wine and, as if it couldn’t get any better, oozy bits of melted mozzarella. Oh my…
Meatloaf

While Meatloaf isn’t a fast meal due to its long cooking time, it’s a really easy meal to prep. This meatloaf uses Mumsie’s Meatball sauce on top, which is one of my favorite things. The only way I see fit to eat meatloaf is with a side of mashed potatoes and broccoli. Total comfort food.
Lasagna

Who doesn’t love lasagna? When I make this lasagna, I try and sneak veggies in as often as possible but Brian usually objects and lasagna is his favorite dish so I don’t think I should mess with it too much. As a compromise, I usually do half the pan veggie-less and have with veggies, for me. Freeze leftover squares for quick lunches!

Albondigas Soup

I got this recipe from a cookbook called “Food To Live By”. I think the recipe could use a tiny bit of tweaking but it was really yummy and is worth keeping on file! The meatballs need at least an hour in the fridge, so plan to make this with enough time (or just make the meatballs the night before). The soup itself is really quick and easy.
Chateaubriand

Sophia made this awesome beef dish for Girl’s Night using some grass-fed beef she had on hand. This is basically steak baked in a creamy mustard sauce. Sophia served this with roasted potatoes and zucchini and it was awesome!
Mumsie’s Meatballs

This is an old family recipe. Our adopted grandmother, Mumsie, used to make these at Christmas. Every time I’ve made these for a party, they’re a huge hit. This recipe makes about 40 meatballs. Plan ahead for these! The meatballs are best if they’re left to marinade in the sauce overnight.
