Crockpot Stewed Chicken

Whole chickens are one of the easiest, tastiest things to make. One chicken makes several meals (plus broth!). I like to put a chicken in the crockpot on a Sunday morning. Then we have a delicious Sunday dinner without too much effort. This chicken is great served with mashed potatoes and roasted garlic butter zucchini.
After you’re done eating dinner, consider dicing and freezing leftover meat for something else, like chicken enchiladas or chicken pot pie. Also save your unwanted meat, skin, and bones for making chicken stock. Either throw the bones and skin right back in the crockpot and make stock overnight or put the bones in the freezer for later stock-making.
Homemade Chicken Stock

Homemade Chicken Broth is exceptionally easy to make and much better (in flavor and health) than store bought stock. It’s also really cheap and a great way not to waste chicken parts you would normally throw out. Here is a super easy way to combine making dinner with making chicken stock.
Chicken Tortilla Soup

My sister Becky found this recipe years ago and we make it often. It is really tasty, light and quick. Serve with sour cream and crunched up tortilla chips.
Refried Beans

I love restaurant refried beans. These beans are a close comparison. The secret ingredient in these beans is bacon grease. You can make this recipe without it (or sub in olive oil or another fat), but the final product isn’t nearly as tasty and authentic. I’ve come to learn that animal fats (including bacon grease) are not unhealthy fats. When I make bacon (such as for BLTs), I pour the grease into a jar and keep it in the fridge. The bacon fat doesn’t add a strong bacon flavor to these beans, just a creamy bit of smokiness. Trust me once and try it.
Turkey Chili

Chili is a great crockpot meal. Toss in the ingredients in the crockpot in the morning before work and come home to ready made dinner! Make a double batch and freeze leftovers for nights when you’re too tired to cook or pull out frozen chili to use as an easy, filling topping on baked potato night (a favorite night in my house)!
