Veggie Bagel

This is a quickie “recipe” because it’s barely a recipe at all. It is pretty much what it looks like it is – a bagel with some veggies and cream cheese. But wait! There is a secret ingredient! A bagel shop I used to frequent in college used to make this beast for me and I loved it then. Turns out, I still enjoy it today. It’s an easy, quick breakfast or lunch and it tastes super.
Asian Noodle Salad

This salad is a great way to get some veggies in, even if you’re not crazy about veggies. It looks like a little bit of a mess but it’s so SO good! The awesome thing is you can keep all the ingredients chopped and ready to go in the fridge, then throw them together as a main meal or a side with no time spent. It’s the dressing that makes this salad so tasty. The dressing is the total star of this salad. It…is…delicious. I like the dressing so much that I use it as a dip for veggies and to marinate meat. Try it!
Falafel Sandwiches

Falafel is a great meatless meal that’s filling and yummy. I have to say that I used to bake my falafel patties, but they’re only so-so that way. Frying the patties makes them so, so tasty.
Squash Pasta

Tara, who used to live in Italy, made this awesome squash pasta for us at Girls Night. I’ve since made it on my own at home because I loved it so much. It’s easy, healthy, and freezes well. Add a little chicken or sausage, if you want more protein. Delish!
Pizza!

Who doesn’t love pizza? Well, my sister didn’t as a kid but she’s a freak of nature. Making homemade pizza is not…that…hard. Trust me, it’s really not. You do need time for stuff to knead and rise so I would say give yourself a good 4 hours before dinner to get things cooked. But you’re not going to be working the whole time. If you have a stand mixer (seriously, everyone should have a stand mixer), this is all that much easier. I’m gonna show you how easy it is.
AND..this recipe for sauce and dough makes enough for two large pizzas so you can either feed a crowd or freeze a doughball and some sauce for even easier pizza making later.
Twice Baked Potatoes

These potatoes are a bit decadent but super yummy. We like to eat these with a hefty side of steamed buttered broccoli and maybe some leftover chili from the freezer, for an easy meal.
Broccoli Cheese Soup

I’m just learning to make more soups. This broccoli cheese soup is a good way to make a vegetarian meal that’s still filling. Serve with cornbread and salad.
Baked Potato Bar

I make baked potato bar for dinner a couple times a month. It’s a good meal to make when I’m tired and don’t feel like cooking or when I want to get a meal in that doesn’t require meat (which I try to do at least once a week).
