Potato Chorizo Soup

I was recently searching for recipes that included kale (nature’s most amazing super health vegetable) and I stumbled onto a version of this recipe. As usual, I made a few tweaks. I love love LOVE this soup! It’s very hearty and filling and can actually be made in about 30 minutes (take THAT Rachel Ray). Serve with a salad and some crusty multi-grain bread and you’re in business.
Homemade Chicken Stock

Homemade Chicken Broth is exceptionally easy to make and much better (in flavor and health) than store bought stock. It’s also really cheap and a great way not to waste chicken parts you would normally throw out. Here is a super easy way to combine making dinner with making chicken stock.
Mean Green Chicken Tortilla Stoup

This is a Rachel Ray recipe that Michele made for Girls Night that was super tasty. Michele tweaked this by adding corn (which I’ve added to this recipe) and leaving out the beer, cheese, and scallions and her version is great, too.
Broccoli Cheese Soup

I’m just learning to make more soups. This broccoli cheese soup is a good way to make a vegetarian meal that’s still filling. Serve with cornbread and salad.
Albondigas Soup

I got this recipe from a cookbook called “Food To Live By”. I think the recipe could use a tiny bit of tweaking but it was really yummy and is worth keeping on file! The meatballs need at least an hour in the fridge, so plan to make this with enough time (or just make the meatballs the night before). The soup itself is really quick and easy.
