Spaghetti with Bolognese Sauce

Spaghetti is an easy throw together meal and making your own homemade sauce is actually easy peasy. The secret ingredient in my sauce is a splash of Sherry or Port wine, which gives this sauce some extra sweetness. I often make a big batch and freeze leftovers for lasagna or quick defrost dinner, as needed.
Chicken Fried Rice

Fried Rice is a super easy, fast and cheap go-to meal. I would say this can go from fridge to table in 20 minutes or less. This is a good thing to make when you have leftover rice. Or if you’ve got a hankerin’ for fried rice, just plan to make something with rice a couple nights before and double the rice batch. You really need to have cold rice for this recipe to work so plan ahead a little. Also, you could use pork or ham instead of chicken if you like.
Honey Peanut Butter Cookies

I have to admit I’m a total dessert person. But I still want my desserts to be somewhat healthy! I like to bake batches of homemade treats like these honey peanut butter cookies and then freeze them. I can pull one out each day and add it to my lunch for a sweet ending. These cookies are made with whole grains and come out chewy and not too sweet.
Arroz con Pollo

Growing up, my mom used to make Arroz con Pollo on a fairly regular basis. I modified this recipe and replaced the white rice with brown rice so it takes a bit longer to cook. But it’s an easy one-dish meal that’s simple enough for a weeknight.
Lasagna

Who doesn’t love lasagna? When I make this lasagna, I try and sneak veggies in as often as possible but Brian usually objects and lasagna is his favorite dish so I don’t think I should mess with it too much. As a compromise, I usually do half the pan veggie-less and have with veggies, for me. Freeze leftover squares for quick lunches!
Chocolate Chip Cookies
This is my friend Gemma’s cookie recipe, I take no credit. They are simply the best chocolate chip cookies you’ll ever have. The best!
Squash Pasta

Tara, who used to live in Italy, made this awesome squash pasta for us at Girls Night. I’ve since made it on my own at home because I loved it so much. It’s easy, healthy, and freezes well. Add a little chicken or sausage, if you want more protein. Delish!
Turkey Gravy

Every year, Becky and I halfway forget how we make the gravy. We know it turns out great and it’s easy, but how does it go again? This year, I’m writing it down. This is all made to taste and to the eye, so ingredient proportions are very rough approximations, just to give you an idea.
Peanut Butter Balls
This is a sentimental recipe I usually make around Christmas. My old kindergarten teacher who was also a family-friend made these and we all loved them. I make these into peanut butter balls because that’s part of the nostalgia for me. But you can also make peanut butter bars, which are easier. I imagine you could also use a muffin tin to make peanut butter cups.
Healthy Oatmeal Bars

These oatmeal bars are so, so good! Kids usually love them and they’re really healthy but don’t taste like health food. I like to make them and keep some in the freezer or fridge for a quick breakfast or snack.
