Beth made this for Sophia’s birthday girls night. While I greatly enjoyed the phyllo cup idea, I think this filling would be equally as tasty over some pasta, rice, or even just on its own.

Super Amazing Peanut Butter Brownies
Beth done good by requesting peanut butter brownies for her birthday girls night dessert. Suzi done good by making these and adding melty chocolate chips on top, along with a scoop of ice cream. Can I die now?
Salsa Simmered Chicken
Suzi made this delicious chicken for Beth’s birthday girls night. The salsa with spices was really really good, especially dished over some rice.
Carrot Cheesecake
This was my birthday dessert, made by Beth at Girls Night after I gave her the challenge to make me either carrot cake, cheesecake, or any other delicious dessert that would make me squeal in delight. Good thing she found a way to combine carrot cake and cheesecake. Also a good thing that pretty much any dessert makes me squeal in delight.
Roasted Tomato Bruschetta
This was another Beth Girls Night recipe, which she got from Rachel Ray. It’s a nice twist on regular bruschetta. Roasting cherry tomatoes makes them warm, squishy and sweet, perfect atop a toasty slice of carb goodness.

Chicken and Feta Tacos
Tara taught us how to make these delicious, light chicken feta tacos. I don’t usually like arugula but I like it in this dish. The feta and grape tomatoes add a nice, fresh touch. And they’re easy and quick!
