Super Amazing Peanut Butter Brownies

This was my birthday dessert, made by Beth at Girls Night after I gave her the challenge to make me either carrot cake, cheesecake, or any other delicious dessert that would make me squeal in delight.  Good thing she found a way to combine carrot cake and cheesecake.  Also a good thing that pretty much any dessert makes me squeal in delight.

Roasted Tomato Bruschetta

This was another Beth Girls Night recipe, which she got from Rachel Ray.  It’s a nice twist on regular bruschetta.  Roasting cherry tomatoes makes them warm, squishy and sweet, perfect atop a toasty slice of carb goodness.
