Arroz con Pollo

Growing up, my mom used to make Arroz con Pollo on a fairly regular basis. I modified this recipe and replaced the white rice with brown rice so it takes a bit longer to cook. But it’s an easy one-dish meal that’s simple enough for a weeknight.
Alfajores (Peruvian Cookies)

These traditional peruvian cookies consist of two light, shortbread-style cookies with caramely manjarblanco in between, sprinkled with powdered sugar. FYI – the manjarblanco in the middle of these cookies wasn’t cooked long enough so it’s runny and messy. A good manjarblanco will be much thicker.
Manjarblanco

Manjarblanco is similar to Mexican Dulce de Leche. In Peru, it’s used to fill churros, cakes, crepes, and traditional Peruvian cookies called Alfajores (pictured).
Abuelita’s Salad

My Abuelita makes this simple, tasty salad. As basic as it is, I usually get very positive reviews from people.
Peruvian Rice

This is how my dad makes rice and it’s super tasty. You saute a little garlic in olive oil until it’s good and fragrant, then add your rice and water, or better yet chicken stock. If done right, it’s the best rice ever.
Papas a la Huancaina

Papa a la Huancaina consists of a cheesy sauce covering cooked potatoes and eggs. It’s my friend Stephanie’s kryptonite – I whip that up for her and she’s done!
Aji De Gallina

This is a very traditional Peruvian dish. My Abuelita makes it best, but this version is pretty tasty also. It’s a little tough to write down a recipe, since I mostly make it to taste, but below is my best approximation.
If you’ve never had this, the ingredients sound like a strange mix of flavors, but I’ve never made this for someone who didn’t fall in love with it.
Peruvian Chicken with Raisins

This is a Peruvian dish (called Pollo Con Pasas) that’s easy to make, thereby suitable for weeknight cooking. Serve over white or brown rice.
