Yellow Cake with Lemon Frosting

These are actually lemon cake cupcakes with lemon cream cheese frosting but I used my basic yellow cake recipe and just added lemon juice and rind to the batter for lemony goodness.  The cake is what they call a basic “1234 cake” recipe but I’ll give you some additional tips for how to get a fluffy, moist cake.  You can use this cake batter as a base for other flavors of cake, like lemon!

Vanilla Bean Ice Cream with Berry Sauce

When I got my ice cream maker last year, I began searching for the perfect vanilla ice cream recipe and I think this is the one.  Five ingredients and you’re set – who can beat that.  It’s a tad sweet so I may experiment with cutting back on the sugar but everything else is perfect.  I made a quick berry sauce to jazz it up since I made this ice cream for a coworker’s birthday.

Keep in mind – making homemade ice cream is a slow process, which is why it’s such a treat.  It’s completely worth it but you’ll want to plan ahead and start the batter at least a day before ice cream eating so everything has time to cool and set between steps.

Carrot Cake

My 4 year old nephew requested carrot cake for his sister’s 1st birthday so I tried this recipe out.  I found it on the Food Network site.  It’s an Alton Brown recipe that got 5 out of 5 stars by 160 people.  While I thought this cake was pretty darn good (maybe 4.5 out of 5 stars in my book), I don’t think it’s THE recipe (but the frosting is!).  Maybe another piece will help me decide…

Whipped Cream-Cream Cheese Frosting

This is my new favorite cream cheese frosting recipe.  If you like cream cheese frosting, you will love this.  It’s made with whipped cream instead of butter so the texture is more fluffy than normal cream cheese frosting. Fluffy frosting leaves more room in your belly for cake.

Plum Cake

Plum Cake

This is one of my favorite new recipes - it’s a must try.  However, I can take no credit for this cake.  This recipe is from one of my favorite blogs (here is a link) and it’s her family recipe so I have to pay appropriate homage.  Now, I’m generally hesitant to tweak someone’s family recipe. Somehow, that just seems wrong.  But I did in the case of this cake, only to sub in some natural sweeteners and healthy fats.  I also tweaked the name of the cake. I call this cake “Plum Cake” because the cake is made with plums.  Okay, dried plums.  Which are technically called prunes.  Which I guess really makes this prune cake but doesn’t plum cake sound better?  Regardless, this is NOT a prune-ish tasting cake.  Not at ALL.  It’s kind of toffee-like, super moist and the topping you pour over is caramely and oh so good.  So try this plum cake without judgement.  I don’t think you’ll regret it.

Honey Peanut Butter Cookies

I have to admit I’m a total dessert person. But I still want my desserts to be somewhat healthy!  I like to bake batches of homemade treats like these honey peanut butter cookies and then freeze them.  I can pull one out each day and add it to my lunch for a sweet ending.  These cookies are made with whole grains and come out chewy and not too sweet.

Maple Whipped Cream

Maple Whipped Cream

Whipped cream sweetened with a little vanilla and maple syrup is an easy topping for sliced fruit.  The maple syrup doesn’t add too much maple flavor, just a little natural sweetening.  You can also use liquid stevia to sweeten whipped cream, but I prefer maple syrup.  This whipped cream can also be spread on cake, in lieu of frosting.
