Yellow Cake with Lemon Frosting
These are actually lemon cake cupcakes with lemon cream cheese frosting but I used my basic yellow cake recipe and just added lemon juice and rind to the batter for lemony goodness. The cake is what they call a basic “1234 cake” recipe but I’ll give you some additional tips for how to get a fluffy, moist cake. You can use this cake batter as a base for other flavors of cake, like lemon!
Carrot Cake

My 4 year old nephew requested carrot cake for his sister’s 1st birthday so I tried this recipe out. I found it on the Food Network site. It’s an Alton Brown recipe that got 5 out of 5 stars by 160 people. While I thought this cake was pretty darn good (maybe 4.5 out of 5 stars in my book), I don’t think it’s THE recipe (but the frosting is!). Maybe another piece will help me decide…
Zucchini Bread Muffins
Since I have zucchini growing out of my ears right now, I decided to dust off my mom’s old zucchini bread recipe and whip up a batch. I tweaked the recipe by using half whole wheat flour, coconut oil and rapadura. Oh boy, good stuff. One eater called her muffin “divine”. That’s a good sign.
Granola

This is a super simple and fast recipe for homemade granola. The maple syrup, coconut oil, and vanilla give it just a little sweetness. This has become a favorite snack accompaniment in my house so I’ve taken to making it in double or triple batches and keeping sealed Ziploc bags of it on hand. My favorite dessert or snack is Fage Total yogurt with blueberries or blackberries, this granola, and a drizzle of maple syrup. I’ve also eaten this just with milk like cereal and it’s delicious like that also.
Honey Peanut Butter Cookies

I have to admit I’m a total dessert person. But I still want my desserts to be somewhat healthy! I like to bake batches of homemade treats like these honey peanut butter cookies and then freeze them. I can pull one out each day and add it to my lunch for a sweet ending. These cookies are made with whole grains and come out chewy and not too sweet.
Chocolate Chip Cookies
This is my friend Gemma’s cookie recipe, I take no credit. They are simply the best chocolate chip cookies you’ll ever have. The best!
Honey Lemon Bars

I’m always looking for ways to use natural sweeteners instead of sugar and honey and lemon seem like a no brainer. And I LOVE lemon bars. I really like the flavor combination of lemon and honey. While this recipe still contains sugar, the amount is reduced but the taste and texture is preserved.
Pie Crust

This is easiest made with the help of a food processor, if you have one. This recipe is enough for a top and bottom crust. If you only want a bottom crust, then just halve the recipe.
Honey Corn Bread

This is whole grain cornbread recipe, so it’s a little different than regular cornbread but I think it’s tasty, moist, and lightly sweet. Personally, I think I might favor a bit more honey in this recipe, but need to figure that out.
Wheat Drop Biscuits

These biscuits could be rolled out and cut into round biscuits, but I prefer to just make drop biscuits. They don’t look as pretty, but they taste just as good for lots less work. These biscuits are pretty crumbly, maybe because of the oat flour. But they’re moist and buttery.
This recipe only makes 4 small biscuits – double it if you’re wanting more. I actually like the mini-batch, since 4 is usually enough for us.
