Veggie Bagel

This is a quickie “recipe” because it’s barely a recipe at all.  It is pretty much what it looks like it is – a bagel with some veggies and cream cheese.  But wait! There is a secret ingredient!  A bagel shop I used to frequent in college used to make this beast for me and I loved it then.  Turns out, I still enjoy it today.  It’s an easy, quick breakfast or lunch and it tastes super.

Zucchini Bread Muffins

Since I have zucchini growing out of my ears right now, I decided to dust off my mom’s old zucchini bread recipe and whip up a batch.  I tweaked the recipe by using half whole wheat flour, coconut oil and rapadura.  Oh boy, good stuff.  One eater called her muffin “divine”.  That’s a good sign.

Granola

This is a super simple and fast recipe for homemade granola.  The maple syrup, coconut oil, and vanilla give it just a little sweetness.  This has become a favorite snack accompaniment in my house so I’ve taken to making it in double or triple batches and keeping sealed Ziploc bags of it on hand.  My favorite dessert or snack is Fage Total yogurt with blueberries or blackberries, this granola, and a drizzle of maple syrup.  I’ve also eaten this just with milk like cereal and it’s delicious like that also.

Baked Oatmeal

Baked Oatmeal

This baked oatmeal is like an oatmeal custard casserole, similar in taste to french toast (but without the toast).  It’s really delicious, especially on a cold morning when you want something warm and filling.

Nutty Monkeys

Fruit Smoothies

Fruit smoothies make for a great breakfast on the go or snack.  They’re also a great way to sneak in veggies!  I add a small handful of spinach, kale or chard leaves into my smoothie to get some amazingly nutritious greens in my diet. The taste of those greens is mild enough that it’s taste is completely masked by the fruit and a small handful of greens is about a serving, so it’s an easy way to get a serving of veggies.
